Det erh\u00e5lls fr\u00e5n en blandning av mj\u00f6l och vatten som k\u00e4nnetecknas av den metaboliska aktiviteten hos en blandad population av mj\u00f6lkbakterier och j\u00e4st.<\/p>\n<p>Varje typ av j\u00e4st eller bakterier ger specifika aromatiska egenskaper till bageriprodukter, beroende p\u00e5 deras respektive \u00e4mnesoms\u00e4ttning och bakningsprocess (ingredienser och process), d\u00e4rav det stora antalet molekyler, inklusive alkoholer, karbonylf\u00f6reningar, estrar och organiska syror, som utg\u00f6r br\u00f6dets arom (Galey et al., 1994; Hansen och Schieberle, 2005; Petel et al., 2017).<\/p>\n<p><span style=\"text-decoration: underline;\"><em>De organoleptiska egenskaperna hos surdeg\u00a0<\/em><\/span><br \/>\nTill exempel genererar surdegsbaserad j\u00e4sning mj\u00f6lksyra och \u00e4ttiksyra, vilket bidrar mycket till slutproduktens smak och niv\u00e5er som beror p\u00e5 fermentationsf\u00f6rh\u00e5llandena (Callejo et al., 2011; Petel et al., 2017).<\/p>\n<p>Surdegens surhet varierar beroende p\u00e5 temperatur och hydrering:<\/p>\n<p>en flytande surdeg producerad under varmare f\u00f6rh\u00e5llanden kommer att generera mer mj\u00f6lksyra, d\u00e4rav ett skonsamt, surare br\u00f6d.<br \/>\nen fast surdeg producerad vid kallare temperaturer kommer att fr\u00e4mja syntesen av \u00e4ttiksyra och ger d\u00e4rf\u00f6r en bitter, mer aggressiv smak (iNbP, 2003).<\/p>\n<p><span style=\"text-decoration: underline;\"><em>En l\u00f6sning p\u00e5 processen: ingredienser f\u00f6r facilitator<\/em><\/span><br \/>\nDe organisatoriska begr\u00e4nsningarna som \u00e4r f\u00f6rknippade med implementeringen av flora i spontana surdegar har allvarligt h\u00e4mmat denna traditionella praxis. Idag har bagare f\u00f6rdelen med surdegsstarter eller f\u00e4rdig surdeg. Dessa s\u00e4kerst\u00e4ller surdegens kvalitet och den stabilitet som de tidigare saknade.
