Det finns framf\u00f6rallt tv\u00e5 faktorer som har stor p\u00e5verkan f\u00f6r volymen: f\u00f6r det f\u00f6rsta volymen av gaser som produceras under den slutliga fermentationen; f\u00f6r det andra gash\u00e5llningsf\u00f6rm\u00e5gan, inte bara under sista fermentationen, utan ocks\u00e5 under de f\u00f6rsta minuterna vid bakning, under den f\u00f6rsta tiden degen sv\u00e4ller och stabiliserar sin slutliga volym (Inra, 1994). Den h\u00e4r artikeln f\u00f6rdjupar p\u00e5 mekanismerna som p\u00e5verkar gash\u00e5llning i degen.<\/p>\n<p><em><u>P\u00e5verkan av gluten f\u00f6r att f\u00f6rb\u00e4ttra gasretentionen i deg <\/u><\/em><br \/>\nKolhydraterna i mj\u00f6let har en avg\u00f6rande roll i gasproduktionen och f\u00f6r att erh\u00e5lla volym \u00e4r det veteproteinerna som s\u00e4kerst\u00e4ller att gasen beh\u00e5lls i degen.<\/p>\n<p>I degen \u00e4r det gluteninerna och gliadinerna som hj\u00e4lper till att producera det visko-elastiska proteinn\u00e4tverket som kallas gluten. Gluten bildas genom hydrering av mj\u00f6let under degblandningen. M\u00e5nga typer av bindningar finns mellan gliadiner och gluteniner, varav de mest robusta \u00e4r disulfidbroarna (kovalenta bindningar). Dessa spelar en nyckelroll f\u00f6r att s\u00e4kerst\u00e4lla glutenn\u00e4tverkets sammanh\u00e5llning.<\/p>\n<p><em><u>Hur bildas glutenn\u00e4tverket vid bakning? <\/u><\/em><br \/>\nBlandningsprocessen \u00e4r organiserad i flera stadier d\u00e4r glutenn\u00e4tverket bildas gradvis (Le Blanc, 2007):<\/p>\n<ul>\n<li><strong>det grundl\u00e4ggande blandningsstadiumet<\/strong> best\u00e5r i att blanda de grundl\u00e4ggande ingredienserna tillsammans. Under processen sprids vatten genom mj\u00f6lpartiklarna och absorberas av glutenproteiner och st\u00e4rkelse;<\/li>\n<li><strong>intensiv eller h\u00f6ghastighetsblandning<\/strong> best\u00e5r i att uts\u00e4tta degen i blandaren f\u00f6r olika typer av mekanisk p\u00e5verkan, s\u00e5som str\u00e4ckning, komprimering samt sl\u00e5 (under vilken luft inf\u00f6rlivas). Det \u00e4r under den sista blandningsfasen som glutenn\u00e4tverket bildas och f\u00e4ngslar st\u00e4rkelsekornen. Luften som f\u00e5ngas i degen under bearbetningen bildar mikroskopiska lufth\u00e5l, vilka kommer tj\u00e4na f\u00f6r koldioxid som produceras till f\u00f6ljd av fermentationen. Ett korrekt strukturerat glutenn\u00e4tverk resulterar i optimal gasretention, vilket i sin tur f\u00f6rb\u00e4ttrar degutvecklingen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><em><u>Elasticiteten hos gluten<\/u><\/em><br \/>\nVissa s\u00e4rskilt starka mj\u00f6l kan ge upphov till utveckling av kort gluten som saknar t\u00f6jbarhet, f\u00f6r vilka det finns tre tekniska \u00e5tg\u00e4rder:<\/p>\n<ul>\n<li><strong>Ett mellanliggande autolytiskt steg<\/strong>, tillsatt mellan de grundl\u00e4ggande och intensiva \/ h\u00f6ghastighetsfasen kan f\u00f6rb\u00e4ttra slutresultatet. Denna teknik best\u00e5r i att g\u00f6ra en deg av mj\u00f6l samt vatten under grundl\u00e4ggande blandning, efterf\u00f6ljande n\u00e5gra minuters intensiv bearbetning. D\u00e4refter\u00a0 l\u00e5ta den vila i 15 minuter till flera timmar. Under denna tid genomg\u00e5r glutenproteinerna hydrolys genom inverkan av proteaserna i mj\u00f6let. Detta hj\u00e4lper till att slappna av glutenn\u00e4tverket och \u00f6ka dess t\u00f6jbarhet, vilket resulterar i \u00f6kad volym och konsistens i slutprodukten (degens t\u00f6jbarhet minskar motst\u00e5ndet mot gastryck).<\/li>\n<li><strong>J\u00e4stbaserade f\u00f6r-fermenteringstekniker<\/strong>, som best\u00e5r i att tillverka en &#8217;sponge&#8217; av en blandning av vatten, mj\u00f6l och j\u00e4st, vilka har samma effekt n\u00e4r det g\u00e4ller att f\u00f6rb\u00e4ttra elasticiteten hos gluten.<\/li>\n<li><strong>Tillsats av inaktiverad j\u00e4st<\/strong>, vilket begr\u00e4nsar bildningen av disulfidbroar mellan glutentr\u00e5darna.
